python - Recording and transcribing Twilio gather widget responses

Question

I have a Twilio Studio flow that asks two open ended questions, I need to capture, record, export the audio from that specific question and also transcribe the response. I have placed a start record and stop record before and after the gather widget, but that fails, I have placed a record at the start of the call and collected the whole audio file - but I am unable to download the mp3 (and then I would need to learn to extract just the audio I need). Sorry this is basic - but I am just starting out on this journey! (both python and Twilio!)
